Miso making is a special skill: it is a living food, including processes that fluctuate according to the manufacturing conditions.
Traditionally, miso is fermented in a room where there are temperature fluctuations, and it captures yeast in the air to enrich the fermentation.
So your miso will be unique, specific to you!
